Iberian ham holds a significant place in European haute cuisine due to its unique qualities. This ham is made from 100% acorn-fed Iberian pigs, which graze freely in approximately 850 hectares of oak meadows, with each pig enjoying about four hectares of space. This natural environment and traditional rearing method are crucial to the ham's distinct flavor and quality. Elias del Toro, Executive chef at Abades Triana restaurant, describes the product as 'wonderfully rewarding,' noting that its unique 'tones' and 'umami' are 'indescribable' when creating a recipe.

A Success Story Built on Tradition and Craftsmanship

The production of Iberian ham is based on decades of tradition and craftsmanship. Valeriano Miguel Ramos Gonzalez, Ham master celler at Cinco Jotas, explains that approximately 55 to 60 people work in rotation throughout the year, moving the hams every three months during the three-year curing process. This meticulous care ensures that Pata Negra ham is recognized as an emblem of gastronomic excellence in Spain and Europe. 35% of its total production is exported to 55 countries, expanding its global reputation. Severiano Sánchez Garcia, Master carver at Cinco Jotas, emphasizes the importance of skilled carving, stating that 'a good carver can turn a mediocre ham into a great ham, whilst a bad carver can turn an extraordinary 100% acorn-fed Ibérico ham into a bad ham.'
